Making a big batch of this salad is an excellent way to get a bunch of healthy protein and fat, as well as a large serving of vegetables, all in one bowl!
I like to eat this type of “salad” straight from the bowl, and it’s also great to load into lettuce/spinach boats, as well as certain kinds of wraps.
There are about a million variations to this recipe, so feel free to experiment and get creative with your ingredients and spices.
Ingredients:
2 cans of wild caught salmon (we usually get Trader Joe’s brand)
1 avocado
1 Tbsp olive oil
3-4 stalks of celery
1/2 red onion, chopped
1 small apple, chopped (I like the sweeter, crunchy varieties like Fuji and honeycrisp)
Garlic powder to taste (~1/2 tsp)
Salt to taste (sea salt)
1/2 tsp dill
Juice from 1/2 lemon
Instructions:
1. In a large mixing bowl, mash the avocado and blend with olive oil
2. Drain cans of salmon and mix into the avocado/olive oil mixture
3. Add remaining ingredients and spices, including lemon juice
4. Enjoy!
Like I mentioned above, there are a lot of ways to get creative with the flavor of this kind of salad. Some examples inlcude: making it “Greek” style with cucumbers and kalamata olives, adding a little kick with ginger and/or pepper (not AIP), or adding other types of fruit, such as grapes.
