Serena’s Egg ‘Ums (Paleo, Breakfast)

If you’re looking to cut your carbs, breakfast can be one of the most challenging meals. Here’s a healthy breakfast recipe from our very own Serena. Enjoy!
Makes 12
Cook Time: 20 min
Cook Temp: 350
1 dozen eggs
2 tbl water
½ tsp salt
¼ tsp black pepper
1 tbl Garlic (optional)
1 cup diced veggies of your choice (Onion, Tomato, Bell Pepper, or Spinach)
1 cup diced meat of your choice (Ham, Bacon, or Smoked Salmon)
½ Cup grated cheese (optional)
Preheat oven to 350 degrees F
Grease cupcake pans (very well)
Beat eggs, water and spices together in large bowl until fluffy
Pour mixture into cupcake pans about ¾ full
Add meat and veggies to each cup
Bake for 15 min then top with cheese and bake additional 5 to 10 min (till eggs are set in middle)
