Stephanie will be the first person to admit that eating a healthy breakfast can be really tricky at times…
This is especially true when you’re in a hurry in the morning and don’t feel like frying up bacon and eggs (sounds lovely, though…)
So if you’re looking for a simple, nutritious and convenient on-the-go breakfast solution, this recipe should be right up your alley!
Ingredients
1 ½ cups gluten-free rolled oats
¾ cup whole almonds
½ cup dried cranberries (or blueberries)
½ cup pistachios
1/3 cup ground flaxseed
1/3 cup walnuts
1/3 chia seeds
¼ sunflower seeds
1/3 cup maple syrup or honey
¼ cup unsweetened apple sauce
1 cup almond butter
Instructions
Line an 8”x8” baking pan with parchment paper
Combine all dry ingredients in a large bowl (first 8 ingredients)
Add last 3 ingredients to box and mix well
Press mixture firmly into the baking pan
Place in freezer for 1 hour
Remove from freezer and remove from pan using parchment paper
Cut into bars and store in an airtight container in the fridge
Enjoy!
